Looking for something to make for dinner tonight? Take a page from Karl Towns’ playbook and try shredded pork with caramelized mashed plantains, a Dominican-inspired dish Karl recently made with Jill Merkel, EXOS dietitian for the Mayo Clinic Sports Medicine department. Merkel came up with the recipe based off Karl’s Dominican roots (his favorite foods are arroz con pollo — chicken and rice — and tostones — fried plantain slices), but kept his needs as a professional athlete in mind (aka it’s healthy).
It’s Karl, so it shouldn’t be surprising, but he looks pretty at home not only in the kitchen, but in front of the camera. America, meet your new NBA media darling.
